Despite the (sometimes conflicting) categories of ingredients, I managed to make the BF and I a delicious and different meal.
First lets start with the list of ingredients sent by you! (Carolyn I apologize for missing the hot sauce since this was made Friday. It will be at the top of the list for next week!)
-anchovies (yes I used them!)
- peanut butter
Presenting Turkey Burgers on a bed of arugula topped with green goddess dressing and sauteed mushrooms with a dessert of No Bake PB Squares
Prep time: 15 min
Grill time: 10 min
1/2 lb of ground turkey
chopped fresh basil - about 1/3 of a bunch
1/4 cup of steel cut oats
1/4 cup of italian bread crumbs
1 Tbsp. worstershire sauce
1/4 cup of sautéed onion
1 garlic clove.
1/2 cup of mushrooms
Weber Chicago Steak Seasoning
First Sautée the garlic and onions until translucent. Add onions, garlic, turkey and worstershire sauce in a large bowl. mix well with your hands (really dig in!). Then add basil, weber seasoning and steel cut oats. Mix again, the meat will be a little wet. Add bread crumbs until consistency becomes a little more dry. Form into two round patties with your hands.
Green Goddess Dressing
Prep Time: 10 minutes
1/4 cup tarragon vinegar
1/4 cup white wine vinegar
2 bunches green onions
1 bunch fresh parsley
2 (2 onces) cans of anchovy filets- I used one can
2 cloves garlic
1 teaspoon salt
1 lemon, juiced
2 cups of mayo (I substituted for plain yogurt)
Puree vinegars, onions, parsley, anchovies, garlic, salt, and lemon juice in a blender until well combined. Blend in yogurt and serve.
No- Bake PB Squares (adapted from a JIF recipe)
Prep time: 10 minutes
Chill time: 30 minutes
1 cup of creamy PB - I used Peter Pan Creamy Honey PB
1/2 tsp of almond extract
1/4 cup of butter, softened
1 1/4 cups of powdered sugar
1 1/2 cups of crisp rice cereal
1/4 cup of coursely chopped peanuts (if desired)
Line an 8-inch square baking pan with aluminum foil. Blend pb, almond extract and butter in a large bowl. Stir in powdered sugar. Add cereal; mix well, crushing cereal slightly.
