Friday was a kick-off to a great and gluttonous weekend. The great Sara Weaver is moving on to big opportunities in Copenhagen! Since she is one of my favorite people (and mentor) we had a fabulous send away lunch at Smokin' Betty's.
Saturday was a rainy, dreary winter day. And I was nurse Shannon taking care of my sick mom. It's a good thing I had help.
Needless to say I was pretty stuffed. We even had enough left overs for two more meals! Score!
After our late night feast, the BF and I slept until 10 on Sunday! I haven't slept that late since college. And it felt great. Upon reading Kath's post, I had decided to make he and I a nice pot o' oats.
In the mix: (for 2)
1.5 cups of old fashioned oats
1 cup of Almond milk
1/2 cup of water
1 tsp of vanilla
This heaping bowl was good enough to hold my hunger until about 2:00 when I munched on a string cheese and handful of pretzels. Now I'll have to admit, I was kind of burnt out on eating (heavy meals) by this point in the weekend. So on my way to ski with the BF and his family- I was in no mood to eat again.
