Cuz that's my funday.
How's everyone feeling out there? Was your Monday as crazy as mine!? I don't think I actually looked at the clock until 2:00 today and before I knew it, 6 pm rolled around and I was still at my desk. Crazy!
On days like today, I rely on fast dinner ideas and recipes to get me through the work week. Sure I could stop at the amazing and no fail Wawa for dinner, but that would be A.) a waste of moolah and B.) Calorie laden.
Tonight on my train ride home, I mentally scoured my fridge and decided what I would make for dinner.
This literally took me 5 mintues to make. After all, I rolled in the door at 8:30 and was ready to either eat my arm off, or eat truffles for dinner. Neither seemed totally satisfying.
Step 1 :I took an onion I had in the pantry and satueed it up with a little Filippo Berio Olive Oil (ps its the only brand I'll buy) and Mrs. Dash Fiesta Lime seasoning. The fiesta lime was perfect because the rest of my ingredients were a little drab and needed a kick!
Step 2: I added some of my roasted chicken from saturday to the pan just to warm up the chicken and added a few more shakes of fiesta lime.
Step 3: In another skillet I sprayed a whole wheat tortilla with olive oil spray and placed in the pan to crisp. I added a few pieces of Muenster cheese and put my chicky and onion mix on top. I topped it with another tortilla, flipped it once and voila! A delicious and filling meal in 5 min!
