This recipe is a staple in our house. We use it as a topping on just about anything. I mean bacon and guacamole....how could you go wrong? Make this TODAY and put it on top of grilled chicken, a turkey burger, regular burger, eggs, or eat it plain! I promise your significant other will be coming back and begging for more!
Prep time: 5 minutes
4 slices of bacon
2 small onions, diced
1 large tomato, sliced
1/2 cup of cilantro, diced
2 avocados, diced
1/2 lime, juiced
Cook the bacon in a skillet over medium heat until both sides are crispy. While the bacon is cooking, dice up the remaining ingredients (except the lime) and toss them into a large mixing bowl.
Once the bacon is cooked, remove it from the heat and allow it to cool. Crumble or chop the bacon into pieces and mix into the guacamole. Finally, squeeze the lime over the mixture to give the guacamole a tangy zip!
Side note: If you plan to store the guacamole overnight, the more lime juice you squeeze, the longer the avocado will stay green!
PPS: If you are doing the Whole 30 Challenge, this is definitely on the approved list! Horray!
