This Tuesday was anything but ordinary as I slipped and fell ...hard on my way into work. I have two sizable bruises on my knees to prove it. Old man winter I'm so over you!
Today was the last marketing team lunch to wish bon voyage to the one and only Sara Weaver. We are so sad to see her go but wish her all the best in Copenhagen! To celebrate, we went to Steven Starr's Raw Sushi and Sake Lounge.
Three of us ordered the Tuna Bento Box.
Thankfully the afternoon flew by and my commute home was without another wipeout.
I was surprisingly hungry when I arrived home and I scoured the fridge to make a dinner of 'leftovers.'
Here's what I scrounged up.
1 whole wheat tortilla
2 tablespoons of refried beans
2 tablespoons of salsa
1 heaping tablespoon of cheese sauce
1/4 of a chopped onion
1/4 sliced small green pepper
2 tablespoons of black olives
1 tablespoon of sour cream
Preheat oven to 350 degrees.
Take a tortilla and place it on a baking sheet. Spread the refried beans over the tortilla and top with salsa. In the meantime sautee the chopped onions in a skillet with a little olive oil until soft or translucent. Take the onions and scoop on top of the refried bean/ salsa mixture. Add peppers and top with cheese.
Bake for 10-15 minutes or until the cheese begins to brown.
Top with olives and sour cream and serve immediately.
