BUT last night I cooked one of my two favorite meatloaf recipes. That's right I've got two! Am I going to share both at once? Nope. Patience grasshopper ;)
This recipe was adapted from the amazing Jenna at Eat,Live, Run. Her recipes are do.die.for and should be checked out stat.
Prep Time: 10 min
Cook Time: 55 min
1 lb. of lean ground beef
1 cup of diced baby carrots
1 cup diced red onion
1/2 cup of diced mushroom
1 clove garlic
1 cup of plain bread crumbs
1 1/2 Tablespoon of Worstershire sauce
1 egg (beaten)
2 Tablespoons of Filippo Berio Olive Oil
1 tablespoon of Balsamic Vinegar
1 tablespoon of pure maple syrup
1/4 cup of ketchup
Preheat oven to 400 degrees.
In a skillet sautée garlic and onions with olive oil until tender. Add diced carrots and cook down until carrots are soft. Finally add mushrooms and continue to cook until mushrooms are slightly soft.
Mold the meat into a football shape or starfish or whatever you'd like. Place into a shallow (Pam sprayed) baking dish.
For the Glaze, mix together balsamic vinegar, syrup and ketchup until well mixed and brown. Spread the glaze with a spoon or spatula over the meatloaf.
Bake uncovered for 55 min. If you'd like you can make up another batch of the glaze for topping when serving.
